Quick easy and DELICIOUS chicken paprikash

My kitchen has smelled of dried peppers for two months. When I run my hands through my hair little red powder flakes appear on my fingers. I’ve sold so many servings of chicken stewed with Hungarian paprika to my neighbors that they won’t accept them anymore. I’ve started leaving leftovers in deli boxes on the doorsteps of pregnant friends when they’re out so they can’t refuse them. It’s not that chicken paprikash the Hungarian dish of chicken stewed with onions paprika and sour cream served over noodles or spaetzle is a particularly difficult dish to make. The problem is that it’s almost too easy.

Whenever I step into the kitchen I try to balance in my mind the amount of effort I put into a dish against the expected return. This is true whether I’m developing a ramen recipe or whipping up a quick midnight snack. So there are times—say on Saturday afternoons when my wife’s friends are coming over for dinner and I really want to pull out all the stops—when I’m willing to put in whatever effort it takes to get one or two degrees closer to my idea of perfection. At the other extreme there are times—maybe late at night after a night of beer and karaoke—when I’m perfectly content to throw grated cheese on tortillas sprinkle them with pickled jalapeños throw them in the microwave and call them nachos. Both results are delicious in their own way and neither should replace the other.

So when I look at something like chicken paprikash a naturally simple home-style dish I have to be extra careful to make sure I find an effort-to-flavor equation that’s well-balanced. That proved especially tricky with this dish. After playing with the recipe for weeks I just couldn’t decide whether to post my super-simple version that yields really great results or the more complex version that yields slightly better results.
