Discovering eggplant tian is like sending the man you love (in this case eggplant parmesan) away for a makeover and getting him back ten times more handsome than he was. Eggplant parmesan is of course delicious. I’ve been eating it since I was six. It’s as comfortable as flannel pajamas. But it’s quite a heavy dish and doesn’t look very appetizing on the plate.
