Roasted beets healthy tasty and naturally sweet!

Roasting brings out the full sweetness of this delicious vegetable. The process is simple and straightforward and produces beets with a more intense sweet flavor without sacrificing texture. Beets are best roasted with the skin on which is easy to remove once cooked. Allow plenty of time if preparing them for immediate use as they can take up to an hour to cool enough to peel and be sure to use pure or light olive oil when roasting. Serve as is add to a recipe or store roasted beets in the refrigerator or freezer.

The roasted beetroot is delicious on its own and a great side dish for any meat. It also goes well with soft goat cheese and seasonal vegetables in a salad. You can also serve it gently warmed over pasta; this is delicious with fresh rocket.
