I know everyone says their mom’s meatloaf is the best and I agree — my mom’s recipe is the best! This Apricot Meatloaf has been a favorite of mine since I was a kid. While I love serving it fresh and warm a good meatloaf sandwich is also a comfort food the next day. I serve it with a nice arugula salad with cherry tomatoes raisins chopped walnuts and vinaigrette dressing. Or for a southern flair serve it with garlic mashed potatoes and fresh steamed green beans. Simply delicious — mom is always right!
