Like most Americans I love Greece’s golden green-filled spanakopita. But with layer upon layer of delicately painted phyllo it’s a commitment to make. Batsaria is a deeply flavorful cousin to the flashy spanakopita and it also deserves a spot in the spotlight. This rustic peppery pie is dense and satisfying packed with hearty vegetables and feta cheese and not a phyllo in sight.
Batsaria is traditionally made with wild greens that are hand-harvested blanched and juiced. For a simpler more modernized version I use frozen kale and/or collard greens along with fresh dill parsley and mint for bright herbal notes.
