Some ovens actually have a dehydrator setting. But if yours isn't just on the lowest setting your oven is probably going to be somewhere between 160°F and 200°F. And if your oven has a convection setting that's great. Just turn the oven on low with the convection fan on and the circulating air will help dry out the jerky. In fact that's all the dehydrator does it cooks at a very low temperature while the convection fan moves the air around in the oven.
You need some sort of rack so that the air can circulate under the meat. I use a regular roasting rack in a baking sheet and it works perfectly.
You can use almost any type of meat to make jerky although beef is the most common. You can also use buffalo meat to make jerky and even chicken or turkey breast makes a tasty jerky. Venison works well too. In general lean meat is best for making jerky.
