Chicken yassa also known as poulet yassa is a mildly spicy dish made with an abundance of onions. The onions are traditionally marinated in Dijon mustard lemon juice and herbs and spices such as cayenne parsley and garlic. It is then cooked down into a thick comforting stew with grilled or baked chicken.
This dish originated in Senegal but yassa is now eaten in many West African countries and can be made with other meats such as lamb or fish instead of chicken. It is considered a hearty stew and is also one of the most recognizable comfort foods of Senegal.
