I can’t say I’ve ever been to India (although Wes Anderson would love to take me there). I also can’t say I’ve eaten in that many authentic Indian restaurants. But I’ve tried a curry or two and I know what I like. This recipe is a mix of everything I like about curry all in one pot.

Since I wanted to keep it vegetarian/vegan I served it over coconut quinoa for extra protein and fiber. I have to say it was a delicious choice. It really ties the dish together well (but is totally optional).
The rest of the recipe consists mainly of vegetables of your choice and a special blend of herbs.
