Creamy Dill Potato Salad
Serious Eats / J. Kenji López-Alt
Dill potatoes and sour cream go hand in hand. Ask any Scandinavian and they’ll tell you. That said most Scandinavian potato salads tend to be exceptionally creamy. This version uses just a little bit of sour cream instead of relying on a good technique to fill the potatoes with lots of flavor and brightness.
When I worked in a hotel restaurant part of my job was to prepare all the food for the night cooks to serve on the room service menus. That meant lots of pre-formed turkey club sandwiches a big pot of lobster bisque a couple dozen dumplings and a whole lot of potato salad. The bad news? I made potato salad almost every day for the better part of a year and a half of my life. The good news? There was no set recipe which meant I was allowed to use a fair amount of bad judgment in making it.
