It's Hatch green chile season here in Colorado. Since my kids love soup (and I've found it's a great way to introduce them to new flavors!) I decided to make a big pot of green chicken chili so they could try the Hatch chili!
Roasted green peppers don't have to be spicy. I used mild Hatch peppers so the soup was kid-friendly but still rich and hearty – and with a great chili flavor!
