What makes a perfect chicken congee jook recipe?

Whenever I got a bad cold or flu as a kid I remember my mother making a pot of the most comforting sick food: jook also known as congee or rice porridge. She would usually start with the congee or rice porridge in the morning (as soon as I got sick).
Sometimes it was flavored with a ham bone sometimes with leftover chicken broth. It was cooked on the stove until the rice dissolved in the water and thickened to a creamy soupy consistency.
