Kitchari (also known as khichuri khichri or khichdi) is a dish with ancient roots in India. As early as 300 BCE an Indian philosopher and statesman named Chanukya wrote about a balanced meal made from rice lentils salt and ghee or oil (source).

Kitchari means “mixture” and the dish is known for having two main ingredients: rice and lentils (often moong dal). And it often includes spices like turmeric ginger and more. In Ayurvedic medicine kitchari is known for aiding in detoxification and balancing the three doshas.
