Simple Sweet Potato Hash & Eggs from the Oven

It was the morning after the first leg of my cross-country road trip and I woke up to the smell of cinnamon and butter wafting through the air. We had arrived late at night at Stella Parks’ (aka BraveTart) home in Lexington Kentucky and had spent far too much time drinking and talking before calling it a day. With a full day of driving ahead of us the next morning it would have been smarter to go to bed early but I’m wise enough to know never to turn down a Kentuckian’s bourbon in his own home.
Stella was hard at work on her book and had gotten up early to test just how sticky a sticky bun could get before it reached the upper limit of absurdity (answer: very sticky) and there was already a batch in the oven when I finally rolled out of the pull-out bed in her office. I’m never one to do anything half-heartedly so I decided then and there to fully commit to procrastination before heading out again by having a long leisurely brunch.
