Perfect Roasted Mushrooms Recipe
Let’s face it raw mushrooms are bland and adding those raw slices to my salads as a kid was one of the reasons I really didn’t like them as a kid. The other reason is that if they’re not roasted properly they can get pretty slimy. A properly roasted mushroom on the other hand is meaty and intensely flavorful. That’s what we’re looking for.

Conventional wisdom dictates that you should never wash mushrooms but that’s fine: you can do it anyway. Even after prolonged soaking they will absorb about 2% of their total weight in water which isn’t enough to make a big difference in cooking time. You can wash them in cold water dry them in a salad spinner and proceed as normal. I would recommend cutting and trimming them before washing though because like Bon Jovi’s influential 1986 album they’re a bit slippery when wet.*
