Simple Romesco Sauce (7 Ingredients!) | Minimalist Baker Recipes
We had a fun market near our apartment at the time that had a creamy dairy free red sauce called romesco. I was shocked. I had never seen something so beautiful that tasted so creamy and delicious and had no dairy! I had to investigate.
As with many dishes it is unclear exactly where romesco first originated. However the version that most closely resembles the one we see today is thought to have originated in Spain in the 16th century.
Romesco is a simple sauce that is incredibly versatile and usually starts with roasted tomatoes. But since I am a sucker for a sweeter sauce we use roasted red peppers in our version.
