Paella is a rice dish that originated in Valencia Spain. The word paella means "frying pan" and the dish is traditionally made in a shallow wide pan with handles on the sides sometimes called a paellera.
Paella usually contains rice saffron (which gives it its yellow color) meat or fish stock and spices. It is traditionally cooked over an open fire where it develops a crispy crust called socarrat.
