Vegan chili is my favorite pantry meal. I know that no matter how busy my day is I always have spices canned beans tomato sauce and an onion on hand that I can turn into an easy weeknight chili.

For this recipe I take the basic vegan chili to the next level by adding quick-cooking bulgur which can be found in the health food section of your grocery store and chopped mushrooms. The combination of bulgur and mushrooms mimics the texture of ground beef.
