Easy Homemade Eggplant Caviar (Eggplant Dip)
Forgive the lofty name of this simple dish. Like its black-eyed pea cousin Texas caviar "eggplant caviar" has nothing to do with salted sturgeon eggs.
It's called that I think for a couple of reasons. You put a dollop of it on a cracker to eat it it has a little bumpy texture to it and the flavor is delicious. It's not exactly fancy but you can pretend right?
My friend Kathi brought this eggplant caviar to a dinner party I hosted this summer and if it hadn't been for the other guests I could have easily eaten the whole batch. (My wish was granted the following week when we made another batch together. Amen to the recipe testing.)
