Eggplant is part of the nightshade family of vegetables. While some argue that nightshades should be avoided because of some of the plant compounds they contain that help protect the plants from insects there is little evidence that these compounds are toxic to humans especially when the vegetables are fully ripe. In terms of nutrition eggplant does provide some plant-based protein fiber vitamins and minerals. Along with the antioxidants in eggplant this nightshade vegetable has been linked to a lower risk of heart disease and cancer and improved blood sugar control.
