Veggie burgers can be a deceptively difficult dish to make at home. While these vibrant burgers have the potential to be seriously flavorful and crispy they all too often end up crumbly or dry. So how do you make a flavorful veggie burger that’s packed with rich nutritious ingredients and has the perfect texture? We spoke to Rich Parente chef and owner of Clock Tower Grill in Brewster New York to get some insider tips on how to make a veggie burger that’s truly delicious.

According to Parente using good simple ingredients is the first step to making the perfect homemade veggie burger. "The veggie burger we make at Clock Tower Grill is pretty simple and has a nice crispy crust. It's black beans peppers onions and some spices along with Panko breadcrumbs and cooked rice to bind it together."

Then it’s all about using the right tools. “To avoid mushy cooking the best way to cook a veggie burger is on a flat-top grill or in a cast iron skillet to give it a good crust and nice caramelization” he said. So if you normally use a traditional grill to make veggie burgers that could be the source of all your problems.

While some chefs are used to flipping veggie burgers on a grill burgers of all kinds can benefit much more from pan-grilling. “Cook veggie burgers in a heavy-bottomed pan like a cast iron or griddle to get a good even caramelization” advises chef Rich Parente. “If you put them directly on the grill they’re more likely to fall apart.”
