Falernum is a bar cart staple in the world of tropical spirits used in many beloved classic cocktails from the rum swizzle to the jet pilot. Characterized by their complex flavors and elaborate garnishes these drinks often have subtle undertones of warm spices and roasted nuts that you can't quite place. That's the falernum at work.
Falernum originates from Barbados where it was made with rum in the distilleries on sugar plantations. It is in fact a very concentrated punch as it contains the three primary components of one: rum sugar and citrus in the form of lime juice. Thanks to the high concentration of acid and alcohol falernum is technically shelf stable but like all cocktail ingredients it is best kept refrigerated to avoid over-diluting drinks made with it.
