Farro with roasted Brussels sprouts and pistachios

If you read Friday’s post you’ve already seen the shortened version of this recipe. I love this recipe because it’s an easy way to “use what you have in your fridge.” Especially if you have leftover farro in your fridge right now. If you don’t have cooked farro in your fridge right now I suggest making this hearty salad tonight and this fried “rice” recipe tomorrow. That’ll get you halfway there.

Of course you can also make this with brown rice or white rice or whatever you have. I found farro to be a nice alternative because I love those chewy nutty grains. Jack fried up some shallots and set them aside (one of his jobs here: fryer guy) while I quickly fried up some leeks added grated Brussels sprouts etc. This recipe is super quick so make sure you have all of your ingredients ready to throw in the pan.

After you have prepared the shallots and mixed your "fried rice" simply serve it by placing the fried rice on a plate placing a fried egg on top and then garnishing with the shallots. Simple!
