Steak tartare is one of those dishes that most people reserve for a visit to a restaurant where they trust the hands of trained chefs to safely transform raw beef into a delicious mound that is perfectly dressed and seasoned. If you are lucky enough to eat it in a bistro in Paris it is even better.
But I have news for you: steak tartare is one of the easiest and most delicious “fancy” appetizers you can make at home. We should all be eating a lot more of it assuming you’re comfortable with some of the inherent food safety risks because yes they are there. That said with care those risks can be minimized and honestly there’s no one you can trust more to minimize those risks than yourself. I mean how clean are those bistro kitchens anyway?
