I’ve mentioned my love for Filipino cuisine before but it took me a while to develop this love from dish to dish. The first delicious dish I ever tried which kicked off this trip was Filipino BBQ a sweet and sticky skewer of grilled pork or chicken.
I rarely leave a Filipino restaurant or family gathering without having some barbecue and while it’s so common it’s an ongoing challenge to recreate it exactly at home. This recipe first came to me as a list of ingredients—not quantities—from the fiancé’s uncle who is known as the family barbecue chef. I’m still working on perfecting the exact amount of everything but I’m proud to say I’ve come pretty close and it grills up a beautiful batch of those glistening chunks of meat.
