Six years ago in Manila I found myself at a children’s party grabbing a sample of every dish on offer: fried chicken spaghetti and a San Miguel. At the end of the buffet table next to a life-size effigy of Big Bird and the requisite karaoke machine I tasted my first Filipino spaghetti.
The meat sauce was loaded with sugar and hotdogs definitely not the spaghetti of my youth. It was definitely kid food but I couldn’t help but really enjoy it and went back for a second helping to take the rest of my beer with me. Since then I’ve half-heartedly gorged myself on Filipino spaghetti whenever I show up at a family party because I have a strange attraction to sweets.
