Last week we updated the collection at QUITOKEETO for summer and also added some new recipes to the shop’s website. One of the recipes I made was this simple twist on a classic pesto. It starts with toasted coriander seeds crushed with garlic and salt before adding almonds and lots of lemon zest. I chose a mix of fresh basil rocket oregano chives as the herb mix and immediately noticed how much I love chives for their strength and fragrance. There’s lots of grated pecorino cheese and a final dilution of good olive oil. Summery and a little unconventional – these are all things I love. It looks familiar as a simple basil pesto and then surprises you a little. Either way it’s easy and I thought you might give it a try. And if this recipe doesn’t work maybe one of the others will.
