One of the things I obsessively collect in my cooking life—aside from bottomless container lids and mustard seed jars because every time a recipe calls for them I assume I’m exhausted because of that one time in 2010 when I was—is recipes with really short ingredient lists. It’s not revolutionary to learn that you can make a salad with just olive oil and vinegar for example or to find tomato bread or basil pesto on these lists but Marcella Hazan’s 3-Ingredient Tomato Sauce is indeed a revelation especially if you’re short on time to go to the store or only have the patience to cook. So this Minimalist Barbecue Sauce Bacon Corn Hash is that summer squash pizza topping that might convert anyone to zucchini and if not this Quick Zucchini Sauté will be the omelette that is basically the national dish of Spain (and mine) and let’s never forget all the magical things that happen when you pop fresh raspberries brown sugar and sour cream under a broiler or roast a sweet potato until it practically candies on the inside. It’s not quite filling (I keep finding things I missed and taking liberties like the 6th ingredient is butter or olive oil) but I’ve finally gathered a few of my favorites into this collection this summer. Life is busy; it’s here to help.

Flapjacks – not pancakes

Despite all this I am a deeply contradictory person. While I assure you that these recipes require no more ingredients than listed to fulfill their delicious purpose if you tried to tell me about a recipe with a fixed number of ingredients I would immediately become angry at the limitation. "What was the 6th? I might have that one! I really don't mind taking that one out!"

Regardless today’s recipe is a long-awaited addition to the high rewards for low ingredients category. In the US flapjacks confusingly mean pancakes but in the UK flapjacks are something else entirely: a soft chewy crispy caramel-scented bar baked on a griddle made with nothing but oats golden syrup brown sugar and butter*. If they aren’t already we need them in our lives. They’re considered the ultimate tea-time treat; sadly I don’t have much tea-time in my life but I do have hungry schoolchildren who need nut-free snacks and the fact that these are also gluten-free and ridiculously quick to make (you’ll know the recipe by heart the first time you make them) means they’ve been on repeat here since the start of the school year.

"But Deb flapjacks only have 4 ingredients. What's the 5th? I could have it!"
