Luckily for me the show at that point was all about the best dishes chefs had ever created. The recipe that immediately caught my attention and made my head spin was Paine Perdu – the most decadent mind-blowing version of French toast ever. It was gone.
I immediately ran upstairs and told John I had a recipe idea. The original recipe was LOADED with dairy in the form of low-fat milk and butter – things I absolutely can’t tolerate. So I wanted to make a version that was just as decadent but dairy-free. What’s the fastest way to be decadent without dairy? COCONUT MILK. And coincidentally my favorite pie is coconut cream pie so adding that flavor was kind of a given.
This French toast starts in the evening – a step that is not strictly necessary but is recommended. The batter contains:
