Olive Oil with Rosemary | Italian Cooking with Joe

This is not an ingredient that you should buy from a fancy olive oil store it is something that you can easily make yourself. This rosemary oil has a deep green color and is rich in aromas with a savory flavor. Choose an extra virgin olive oil that you like because the flavor is enhanced by the rosemary. You can make the oil with dried rosemary but the result will not be nearly as tasty and the leaves will take on the texture of pine needles. Fresh is best. The aroma and flavor of the fresh leaves are unbeatable when it comes time to infuse the oil and then use it.

When rinsing the rosemary make sure to dry it completely before making the oil. See the callout below for more information on making rosemary oil safely.

There is no need to remove the leaves from the rosemary branches but do rub the stems gently between your clean hands. This will begin to release the herb’s wonderful scent. If you happen to have a bumper crop in your garden or have a lot of it and don’t know what to do with it rosemary oil and rosemary salt are a couple of favorite ways to preserve this herb.
