You'll hear me say many times in these videos that what we make is way better than what you can buy in the store and not only is it better but you literally can't get it in a store! If you've never done this before I think you'll be surprised at how simple and easy it is. In fact the hardest part is finding tomatoes that have been vine-ripened.

Chef John's Fresh Garden Tomato Sauce – Food Wishes

As you know I am not above opening a can of tomatoes or a jar of ready-made sauce to use on pasta. In fact I do it with pride and without shame. But when it is the height of fresh tomato season and the vines in our garden are full of this delicious fruit I suddenly become a huge food snob. Only the homemade stuff will do.

Sure it takes a bit more effort. But it doesn’t matter much! And the result is spectacular. In a perfect world I would only use plum tomatoes. Unfortunately I didn’t grow enough of them this season so I just picked and sauced whatever was ripe.

If you are going to use this same approach keep in mind that you will need to simmer the sauce for a while to reduce and thicken it. I like my fresh tomato sauce to be fairly thin so I reduce it at the same time as I finish my pasta in the pan. I really hope you give this amazing sauce a try soon. Enjoy!
