Fried catfish is an icon of Southern cuisine: for many there is simply no other way to prepare it. There is a heated debate about whether it is best fried breaded with cornmeal or simply breaded in flour. As far as I am concerned this is a healthy debate.
Now I love a good beer batter and some fish are best with that simple coating of flour. But not catfish. Catfish needs to be breaded. Cornmeal breading.
