Homemade fried onions
2 small onions very thinly sliced
⅔ cup vegetable oil for frying
Heat oil in a small saucepan over medium heat. A slice of onion should sizzle slightly when dropped into the hot oil. Add half the onions and cook stirring occasionally until the onions are a deep golden brown about 7-10 minutes. Remove with a slotted spoon and place on paper towels to drain and season with salt. The onions will be soft at first and will crisp up as they cool. Repeat with remaining onions.
