When you’ve just stepped off a plane in Singapore and everything sounds and smells foreign and exotic the words “carrot cake” on a menu seem like a sweet comfort. But then you realize—through the fog of heat exhaustion—that you’re in Asia that the sign is for a stall and that the woman beneath the sign is operating a giant wok. “This is going to be interesting” I said to myself as I placed my order and stepped aside from the long line that had formed.
