I remember watching the movie Matilda as a kid and feeling both jealous and disgusted at the little boy who was forced to eat chocolate cake as punishment for some minor crime he didn’t commit. The glory was put on a pedestal – so thick decadent and fudgy. I wanted to be there with him fork in hand wolfing down bite after bite as the audience cheered “Bruce Bruce Bruce!” (and Dana Dana Dana). But we don’t get everything we want as kids just like I never got that beautiful notebook Penny always carried around in Inspector Gadget. I clearly had a rough childhood.

But as you grow up you realize a lot of things like that in real life kids don’t really get punished with chocolate cake it will feel better when it stops hurting (as my late grandfather said) and that eating large amounts of cake doesn’t get you anywhere good (as my mother said). But the funny thing is despite this realization the craving for chocolate cake (and lots of it) doesn’t go away. It just comes with a guilt fairy fluttering around your head saying “Fatty McFatterson Two Face” as you take huge bites.

My solution? Make the cake healthy with things like banana avocado honey and oatmeal. Then you can send the fairy away and say "No stupid face. It's healthy food." Problem solved. Ugh I hate bossy fairies.

This cake is the fudgiest chocolate cake you will ever eat and I don't say that lightly. The first bite I thought 'Did I bake this long enough?' But as the texture and flavors rolled across my tongue I knew I had done something right. Twelve frantic bites later I knew I had done something very right. This gluten free chocolate cake will fool even the pickiest of eaters into thinking it's loaded with sugar butter flour and eggs.
