¾ cup pure olive oil
Cut the tops off the garlic bulbs. Place the bulbs on a clean work surface; press firmly with the flat of a large knife to loosen the cloves. Remove and discard the skins.
Pour oil into a very small saucepan; add garlic cloves and thyme. Cook over medium heat until bubbles form. Reduce heat to lowest setting and cook until garlic is soft but not browned 20 to 25 minutes depending on size of cloves. Let cool to room temperature 15 to 30 minutes.
