We made this for dinner tonight and it was everything I hoped it would be! Definitely a keeper for my meal planning. I could have sat down with the pan and a fork and just eaten it all. The toasted pine nuts and garlic and just enough cheese…….SO GOOD!

Creamy Pumpkin Spaghetti with Garlic Kale

I'm sitting in a tree with a spaghetti squash.
This is exactly how I like my greens best: tossed with sautéed garlic toasted pine nuts fresh herbs and a handful of grated Gruyère cheese. I mean it. The combination of delicate flavors and textures is Must Have More Now. And right now I can’t think of anything more vegetarian than these on a plate in front of me at lunchtime today. Done.
