You are looking at a dish of *gin* marinated olives. I have been a fan of Castelvetrano olives for most of the summer. They are plump round Sicilian olives with a vibrant tight shiny green flesh. These olives are harvested young and are lightly brined with a buttery texture – even more so when warm. I promise you they are worth hunting down. We had Josey and his girlfriend/fiancée(!) Cathy over for a weeknight dinner the other night and I decided to make this at the last minute. I tossed the Castelvetranos with a gin and olive oil mixture added large chunks of lemon zest and lots of herbs and baked it for a while. Feta cubes were the finishing touch. You can absolutely make this with other types of olives if Castelvetranos are hard to find where you live.
