Perfect Vegan Gluten Free Chocolate Chip Cookies | Minimalist Baking Recipes
Speaking of these damn cookies they’re gluten-free thanks to this (awesomely versatile whole wheat) baking mix. (Yes the one I used to make pancakes.) And they’re SO good and fluffy and addictive that you’d NEVER guess they were gluten-free. Yay!
When I had such great success with the gluten-free pancake mix I immediately wondered if it would work in cookies. Well it turns out IT DOES – very well.
Including the mix these cookies require just 7 ingredients and 1 bowl. That's simple baking at its best.
