Last summer our friend Laura discovered she had a food allergy. Not the kind you can cure with an enzyme pill or avoiding cheese. The kind that requires you to cut out half your diet. She was devastated and so were we. We ate together all the time and the allergies were causing all sorts of complications. But after we gathered our courage we started trying new and better recipes together namely recipes without gluten since that seemed to be the biggest culprit in her diet.

Easy Vegan Gluten Free Pizza Crust | Minimalist Baking Recipes

Laura’s family always has homemade pizza on Sunday nights—a tradition she loved but grew to hate when she couldn’t partake. She and I both looked for gluten-free crust alternatives but always ended up with doughy bean-flavored crusts that weren’t as memorable. That’s when Laura had the brilliant idea to try her mother’s traditional crust recipe but using a gluten-free flour mix instead of an all-purpose cleaner to keep it allergen-free.

The result – oh boy – no joke the best gluten free pizza crust I’ve ever had. She now even prefers it over the restaurant versions and I almost prefer it over the GLUTEN versions at regular pizza places! It’s that good. If you have gluten free eaters in your life you simply have to try this recipe. As Nacho Libre says “It’s the baaayyyyysst.”

I convinced Laura to let me share her recipe and take pictures of her making it. So John and I joined her and her husband Ben on a recent weeknight. We shared a few bottles of wine as they made pizza and I took pictures. Oh yeah and we laughed and joked. We always do. These guys are the best. Husbands watched while the wives worked. Typical 😉
