I woke up early with a mess of hair and eagerly walked around the corner to the kitchen to find a plate of freshly baked muffins on the counter. My grandma is the best at eating. I heated up two jumbo-sized gems and slathered them with butter. Breakfast of champions I tell you.
The only downside to muffins – besides the fact that you always want two or three – is that they are often high in carbohydrates and sugars.
Over the last few years I have experimented a lot with making these breakfast favorites healthier. I have succeeded with my vegan banana nut muffins for 2 and sweet potato almond butter muffins.
