Gougères are my secret weapon this time of year. That means I always have a bag of them in the freezer. I make the dough ahead of time (I have a few extra minutes every afternoon) and then bake them straight from the freezer whenever I feel like it. There’s something irresistible about the way they explode in size. The way they bake into golden pompoms of cheese-crusted magic. Like soufflés I think there’s a perception that they’re tricky to make. But I promise you with a bit of practice (and know-how) you can create an impressive plate of puffery with virtually no effort.
