When I go to the grocery store to buy a carton of eggs I’m faced with seemingly endless choices. Should I buy brown eggs or white medium large or extra large? And then there’s the matter of grading: What’s the difference between Grade AA and Grade A eggs? Is it worth paying extra for Grade AA eggs? To help you make the best choice for your family and your wallet here’s what you need to know.

When I buy eggs at the local farmers market or get them from my neighbor’s chicken coop I don’t mind if they’re not exactly the same size or color. But when large egg producers raise millions of eggs and sell them at market those variations matter. The U.S. Department of Agriculture (USDA) offers an egg grading service to ensure that all of those eggs meet a certain standard. It’s a voluntary service: the egg producer pays for it and in return receives a USDA grading shield.
