This Italian Eggplant Parmesan family heirloom recipe came to the United States with my grandmother when she emigrated from Italy. Growing up in a house where Italian sauce was made every Sunday this eggplant dish was always a favorite. Using good quality ingredients is crucial for this recipe. It is very time consuming and labor intensive. It would be a shame to invest all that time and effort into inferior ingredients only to be disappointed when you eat it later.

Italian Grandma Makes Eggplant Parmigiana

2 medium Italian eggplants peeled and cut into 1/4 inch slices

2 cups all-purpose flour sifted

3 tablespoons sea salt or to taste
