I was excited about this recipe for two reasons: first because it was from a healthy cookbook and second because I could use up some of the Chimayo red chili powder I had in my freezer since we got back from our road trip to Santa Fe. I'm going to try to cook more recipes from the "healthier" cookbooks that have been collecting dust here. Summer is here and I've been really into pies and baking lately – not a good combination.
