Cabbage has a bad name. Unfairly associated with soggy coleslaw or the odor it emits when cooked to oblivion this hearty head of cabbage never seems to get a chance to shine. Even cabbage lover Abra Berens a farmer-turned-chef author and culinary director at Granor Farm in Three Oaks Michigan recalls having doubtful feelings toward this ill-fated vegetable.

“When I was in my early 20s and backpacking around Europe I stayed in a hotel in Nice that smelled like boiled cabbage and I thought This is not how France is supposed to be!” she recalls jokingly.
