Big hugs. If you’re in the mood for a project and want to make something to lighten your mood this is the place to be. A few of you asked about these dumplings when I posted a snapshot of them on Instagram a few weeks ago. They were a Friday night project after a busy week. Instead of going out a night of repetitive stuffing and folding sounded perfect. The filling was strictly inspired by the contents of the fridge because a trip to the store would have defeated the whole purpose 🙂 The filling: caramelized leek green curry paste and cooked mung beans. Everything is thinned out with coconut milk and then pureed and slightly squashed. I rolled out fresh dumpling wrappers (as we talked about earlier) and decided to fold them into big hugs. Because who can resist a dumpling filled with green curry-y goodness folded into big hugs?
