I wish I could tell you that I made today’s pea soup with fresh spring peas. I didn’t. I made it with peas I found in the back left corner of my freezer. And yet it was delicious. I’m sure it would be even better with fresh peas from the market. Here’s how it works. You make an Indian-inspired garlic-ginger paste and use that as the base for the soup along with some onion. There are also some green chilies in there for a bit of kick along with a few other spices. The ingredient list is based on one from this book but I went above and beyond and made this a one-pot soup.
