A few weeks ago Whole Foods was trying to break the Guinness World Record for the most wheels of Parmigiano Reggiano cracked at the same time. Jack and I were the “official” witnesses to Parmageddon at our Austin store. I know what you’re thinking…how does the lactose intolerant girl get into this stuff?

Well first of all Jack will never turn down a chance for free cheese. And second I've learned over the years that hard cheeses don't have much lactose and I don't have a problem with really high-quality cheese. (So just say no to the processed Kraft Green can.)

But what’s really special about this freshly cracked parmesan is that it’s so soft light and buttery that you could eat it in strips. Or make a fancy grilled cheese like I did. I paired mine with sweet fig jam a drizzle of balsamic and some tangy arugula.
