My family’s switch from turkey to ham this past Thanksgiving was a huge victory for me. I’d been thinking about ditching the bird for a few years but to no avail. I love ham but this sweet pork is usually only served once a year when it takes center stage at my in-laws’ Christmas party. That one night I bask in the ecstasy of the smoked and cured meat stuffing myself beyond my wits.
But while I’m fairly well-versed in ham consumption when I set out to make my own this fall I realized that my experience cooking it was limited to one previous attempt. While it’s a seemingly simple prospect—the thing is already cooked after all—I learned that the devil is in the details and decided to do a test run which led to this amazing Coke-Pineapple Glazed Ham.
