In Greece the coastal streets are lined with octopuses lying in the sun from branch to branch to branch to branch. It’s an ancient tenderizing technique where the octopus is dehydrated before being braised and grilled. If your neighbors would tolerate it and you live in a similarly warm dry Mediterranean climate I imagine you could try preparing your octopus this way too. You may already be doing so because if you meet that criteria chances are you already live in Greece. The rest of us aren’t so lucky. Either way grilling octopus that’s crispy and tender is easy and requires little more than a pan and a grill.

If you’ve never grilled octopus before the first thing you need to know is that you can’t just throw a raw octopus on the grill and leave it at that. Well you can but I don’t think you’d want to unless the idea of rubbery shriveled and burnt tentacles appeals to you. Before you grill an octopus it needs to be cooked through. This two-stage cooking process guarantees great results.
